Plan B Wine Cellars, has a 2011 Mourvendre from Happy Canyon in Santa Barbara, California. The 2011 Mourvedre works well on it’s own or with just about anything, it’s my new go to wine. If you ask the winery they will say that the cool and wet growing season led to them reducing the crop load a bit and opening up the vine canopy to encourage light and air circulation around the fruit. The result is a wine that is a bit more fruit driven with plum and spice with the familiar smoky earthiness that they are known for. You could save this bottle but temptations will be there as it drinks well today. If you go to Santa Barbara, California wine trail, Plan B is a winery in an industrial part of of town yet they do everything right so make sure you stop by. Janis, wife and co-owner of Plan B is enjoyable and husband, Marlow knows his craft. You will be taken back with all the wine barrels yet realize after you start tasting that they need to supply the demand. They have an elegant wine bar that is both comfortable and educational. Marlow said that they chose this over retirement, Plan B. Marlow and Janis are taking Plan B and creating amazing wines, a must have is the Plan B 2011 Mourvedre.

Calisaya is a bittersweet liqueur derived from authentic cinchona bark, enhanced with selected botanicals and flowers. It is hand-made in small numbered batches from a traditional Italian recipe of all natural ingredients.
They taste each batch before bottling to ensure all the artfully chosen ingredients have completely mellowed into a perfect mosaic of flavors. The result is a natural liqueur of rare purity and inimitable flavor.

They use a copper pot still made just for them by Bavarian Holstein Stills from Germany. The harvest takes place when the plant is fully matured, at about eight to twelve years. After removing the leaves (or paddles) with a machete only the pineapple shaped heart remains.
Cooking the pineapple is then chopped to pieces and cooked in a stone pit anchored into the ground. The cooking duration is three to five full days.
The Tahona Grind is when shrapnel remains are split again and put to a grinding stone (Tahona), which is pulled by a horse or mule.
Fermentation, after the grind, the resulting mash (bagaso) is poured into large wooden vats. Natural spring water is added. The mixture now becomes “mosto” which begins to generate its own alcohol.
Copper Distillation, the mosto is then double distilled in copper stills (alambiques) where the alcohol is vaporized and transformed into Mezcal.
