El Silencio Joven Mezcal, is an artisanal, hand crafted spirit made in San Baltazar Guelavila, Oaxaca by Master Mezcalier Pedro Hernández, a ninth-generation “Maestro Mezcalero”. El Silencio produces only “Premium” and “Super-premium” 100% Agave Mezcal. As an organic Mezcal, we use only the finest and carefully selected 10-12 year old Agaves, our products are handmade in small batches resulting in the smoothest, most elegant, and delightfully complex expressions in the market. El Silencio’s production does not involve any additives or industrial processes. The result is a craft spirit of the highest quality with an infinite range of flavors, dimensions, and character.

The harvest takes place when the plant is fully matured, at about eight to twelve years. After removing the leaves (or paddles) with a machete only the pineapple shaped heart remains.
Cooking the pineapple is then chopped to pieces and cooked in a stone pit anchored into the ground. The cooking duration is three to five full days.
The Tahona Grind is when shrapnel remains are split again and put to a grinding stone (Tahona), which is pulled by a horse or mule.
Fermentation, after the grind, the resulting mash (bagaso) is poured into large wooden vats. Natural spring water is added. The mixture now becomes “mosto” which begins to generate its own alcohol.
Copper Distillation, the mosto is then double distilled in copper stills (alambiques) where the alcohol is vaporized and transformed into Mezcal.
