El Silencio Joven Mezcal, is an artisanal, hand crafted spirit made in San Baltazar Guelavila, Oaxaca by Master Mezcalier Pedro Hernández, a ninth-generation “Maestro Mezcalero”. El Silencio produces only “Premium” and “Super-premium” 100% Agave Mezcal. As an organic Mezcal, we use only the finest and carefully selected 10-12 year old Agaves, our products are handmade in small batches resulting in the smoothest, most elegant, and delightfully complex expressions in the market. El Silencio’s production does not involve any additives or industrial processes. The result is a craft spirit of the highest quality with an infinite range of flavors, dimensions, and character.

The harvest takes place when the plant is fully matured, at about eight to twelve years. After removing the leaves (or paddles) with a machete only the pineapple shaped heart remains.

Cooking the pineapple is then chopped to pieces and cooked in a stone pit anchored into the ground. The cooking duration is three to five full days.

The Tahona Grind is when shrapnel remains are split again and put to a grinding stone (Tahona), which is pulled by a horse or mule.

Fermentation, after the grind, the resulting mash (bagaso) is poured into large wooden vats. Natural spring water is added. The mixture now becomes “mosto” which begins to generate its own alcohol.

Copper Distillation, the mosto is then double distilled in copper stills (alambiques) where the alcohol is vaporized and transformed into Mezcal.

molaa Viva El Tequila!

Museum of Latin American Art (molaa) has a must attend annual event, Viva El Tequila! Experience the rich and proud tradition of tequila and some additional Mexican spirits. MOLAA’s annual Viva el Tequila! event is always successful, fun, educational and each year I meet more amazing tequila lovers. Learn from distillers, owners and brand ambassadors about the traditions surrounding tequila as you enjoy unlimited sampling of more than 25 varieties- classic, flavored, mixed cocktails and new tequila brands… Paired with amazing food, this year a gigantic pan of paella being made right in front of you, quesadillas, salad, chips, salsa… and across the way was a desert table with an assortment of sweets and fresh brewed coffee. Mariachi Band Espectacular played all night, dancing, eating and tasting tequila in the MOLAA courtyard outside under the stars on a crisp November evening.

Some of the many brands featured this year were Casa Don Nacho Tequila, El Jimador Tequila, New- Lucha Tequila, Roger Clyne’s Mexican Moonshine, Suerte Tequila featuring their New- Suerte Limited Edition Extra Anejo Tequila, Tequila Herradura, Purasangre Tequila, Lapis Tequila, Seleccion Artenom Tequila (very popular), Mina Real Mezcal, Don Amado Mezcal and so much more… One of the highlights this year was Marco Antonio Ramos master mixologist and Tequilier featuring Honey. The National Honey Board (Miel Pura) had Marco front and center mixing up some amazing cocktails all featuring honey, three of his signature drinks for the evening were the Spicy Tropical Gold, Smoky Bee and Café a la Mexicana all made with honey.
